Mediterranean Chickpea Salad

I absolutely love mediterranean cuisine. The freshness of the ingredients, the herby spices, and its refreshing taste excites me (and my tastebuds). This chickpea salad draws from those flavors. It’s super easy to make and great for the days when you want something healthy and delicious, but don’t want to spend too much time in the kitchen. It can be served over a bed of mixed greens or eaten alone. Also, feel free to spice it up how you’d like...you could add some quinoa and make it a grain bowl; add some more protein with grilled chicken, chicken, or steak. You could even switch the herbs out and add some sliced avocado. Also note, fi you don't have dried basil and oregano, replace them with Italian seasoning. Happy cooking, foodies!

  • 1 small bowl

  • 2 medium/large bowl

Ingredients

  • 14 oz can chickpeas/garbanzo beans

  • ⅓ c feta

  • ½ c bell pepper, diced

  • ½ c red onion, diced

  • 1 c cucumbers, diced

  • 1 c grape tomatoes, halved

  • 2 tbsp parsley, chopped

  • Mixed greens (optional)

  • ⅓ c tablespoons olive oil


Dressing

  • ⅓ c tablespoons red wine vinegar

  • ⅓ c olive oil

  • 2 tsp dijon mustard

  • 2 tbsp honey 

  • Salt

  • ½ tsp dried oregano 

  • ½ tsp dried basil

  • Black pepper

  • Crushed red pepper (optional)

Instructions

1. Make dressing- In a small bowl, add red wine vinegar, olive oil, dijon mustard, honey, dried basil, dried oregano, along with salt, pepper, and crushed red pepper to taste. Whisk until ingredients are combined. 

2. Marinate chickpeas- Next, drain liquid from chickpeas and add to bowl. Next, add half of the dressing into the bowl with chickpeas. Stir dressing and chickpeas and allow them to marinate for 5-10 minutes.

3. Make salad- Next, add bell peppers, red onions, cucumbers, grape tomatoes, parsley, and feta to a bowl. Next, add chickpeas. Combine until all ingredients are coated in dressing. 

4. Serve- Serve over a bed of mixed greens. Top with more dressing if you’d like.
